Food and Wine Pairing: Bacon and Blue Cheese Bison Burger

As much as I love to see the seasons change, I always feel a little melancholy when the summer season ends.  I love grilling even as the days get cooler, and this recipe is a toast to the coming fall season.  Its savory ingredients are sure to make any burger lover happy!   Many people might argue that beer is The Beverage to serve with a burger, but I would like to suggest a hearty cab with this decadent feast.  My new favorite for this meal is Rubberneck Wines 2006 Cabernet.   It’s juicy and intense, just like the burger!  Another wine I really like for this pairing is the very popular Brookdale Vineyard’s 2004 Cabernet.  If you are looking for that truly “gourmet” burger experience, this one is in a league all it’s own.


Ingredients:
Burger
1/2 cup Blue Cheese Crumbles
1 lb Ground Bison
2 TBS Heavy Cream
1/2 cup bread crumbs
1/4 sweet onion finely grated
2 tsp Fresh Ground Pepper

Blue Cheese Sauce
1/2 cup blue cheese crumbles
1/2 cup mayo
1/2 cup sour cream
2 TBS steak sauce
Fresh Ground Pepper to taste

Fixin’s
Bacon (low sodium – I swear you’ll never know the difference, and it’s better for your heart)
Tomato
Onion (sweet or red)
Greens (romaine or spinach)
Fresh Kaiser Rolls

1. Mix all the ingredients for the blue cheese sauce in a bowl.  I like to mash up some of the blue cheese crumbles to really get it melding with the other flavors.  Put in the refrigerator to “steep” while you prepare the rest.
2. To prepare the patties, mix together all of the ingredients – I suggest taking off all your jewelry and really mixing it well with your hands!   Then divide into fourths and pat, knead, and round your patty to perfection.
3. Fry your bacon, slice your tomato and onion, slice the buns and toast them in the broiler.
4. Grill your patties over med-hi heat for 7-8 minutes per side for Medium.
5. When patties are grilled, let sit for just 2-3 minutes before putting your burger together.  I suggest a little of the blue cheese sauce on the bottom of the bun, then on top of the burger itself.  Gourmet!

    It’s 3:20 a.m. as I read this, and I’m suddenly making out my grocery list! First, however, I think a 10-mile hike is in order. Gotta earn it! :)

    I think 10 miles may be pushing it – you could get away with 2-5! Only because the bison is so much better for you! I know that the bleu cheese is not exactly health food, but I could not go on if there were no cheese in my life!

    This looks and sounds delicious… but bacon without the sodium?! That’s like a cake without the frosting!
